There's no Backup Email setting to do that (specific to that mode). There's a setting on Compare Options > Date & Time to add date limits (in either direction), but I guess you'd know if you'd set that (it's off by default).

So, sounds like some kind of glitch on the remote side. I just checked with a test profile to back up the results of a test GMail account (using IMAP, and the [Google Mail]/All Mail setting) and it happily picked up (that is to say, "the server listed"...) 48 mails going back to 2009. (It's a test account only :) )

Then I switched it to POP3, and it listed only 11 mails, but still going back to 2010, so not apparently date-based.

So, I went into the GMail account settings for Forwarding and POP/IMAP, and set it to

Enable POP for all mail (even mail that's already been downloaded)

(which it wasn't: no options were selected). Whether GMail had forgotten a previous setting, I'm not sure (I don't specifically remember if I tested with POP3 before, though I have Shared Settings for it). Anyway, setting that option above (and Saving) then running the profile again got me the other 37 mails (hence a total of 48 mails again).

If you still have issues, try IMAP?
