2 ) Bet you $1 you have your profile set on Decisions-Files (top section - assuming this is a Backup or Mirror) so that 'source always wins' if there are differences (hence, nothing normally flows back from Destination)? Notice there is no mention of date? This setting means older files can overwrite newer files, if that situation arises - which, if you run the profile in reverse (Restore) it almost certainly will. Hence the prompt in the Restore wizard.
8 ) select all the files you do not want to process that don't show Skip already (you can use the usual mass-selection methods) then right-click that selection > Skip. (A shortcut might be to Select All, then Skip, then change the Action for the file you want back to 'Copy To Source' again).
Then go to the file you want to Restore a Version of, make sure the Action is set to Copy To Source, then click the [V] symbol next to the file-name on the Destination side and select the Version you want to copy from the drop-list that appears (in your case, this will probably be one file). Double-check this is the only file that will be processed, then click Continue.
