I think the main question here is "Why are you switching the NAS off" and does it not have a sleep/wake up mode that you could use instead, that way the internal mirroring would work correctly.
As to backing it up using SB, in order to get round the speed problem, you could try doing it from a mapped drive (1st drive) say Z: you would backup from Z: to the address\name of other drive e.g: 192.xxx.xxx.xxx\backup (in other words a FTP type backup
