No idea, unless there is a lot of stuff on Destination to delete (because not present on your Source) and the device is very slow to do so (some NAS boxes are, for example). The scan should take exactly the same time for either, and the copy process (where applicable) the same - the only difference should be the files it is deleting (which it would otherwise have decided to ignore, unless you modify that in the Differences window). Always assuming there are any to delete, obviously. This all assumes you didn't also set some other options in the Mirror, such as hash-comparison, deletion of empty folders (via Copy/Delete > Folders) and so on
Of course, if the first profile you tried was a Mirror, and the Destination was empty, that profile will have had to copy everything. If you then tried a Backup profile (using same Source & Dest), it would have found very little (if anything) to do, and thus finish vastly faster. (Files already present and which match each other are not re-copied). To properly compare them (so that the expectations above apply) you'd need to test 'like for like' (empty Destination for both, or same populated file-set present for both).
If you think you have a problem, you'd need to submit a Support Zip with debug-out of a run where this happens (and one where it doesn't, for comparison - using the same devices). Bear in mind that if all we can see is certain commands seem to take a long time (e.g. deletions), but no actual error messages are logged, all we can assume is 'slow devices'
