Please note that our program bases its decisions on files and not on folders containing files (unless they are empty folders). In other words, SyncBack looks at the file in folders/sub-folders, then scans/compare on both sides to decide what to do basing on the rules set under Decisions-Files settings page. The folders that houses these files are just "there for the ride", and created/deleted accordingly based on the fate of the file within. If it's an empty folder, then it would be governed via a separate set of rules based under Decisions-Files > Folders section.
Thus your requests - if strictly based on folders with contents - would not be possible. However, if based on files, then see my answer below:
Not possible for first request - You can only mirror files from one side to the other, for example, from left-to-right or right-to-left. You have to decide which mirroring you want to perform. You may want to consider a SmartSync profile if you want to synchronize your changes to both Source and Destination.
Second request - That is the default rule set for a Mirror-right profile.
Third request - You can change this rule in your Mirror profile under
Modify > Decisions-Files
but do note that in doing so, you are effectively changing this Mirror profile into a Backup profile (since contents on Destination are ignored and not deleted when not on Source).
