That's not possible with a single profile, but you can achieve it with a housekeeping profile and a Mirror profile run 'in tandem'.
Set your housekeeping profile to the same Source and to a dummy Destination that is an empty folder (and keep it that way). Set the profile to delete files on Source that are not in the Destination. Set the other Decisions to Skip. Set the options on
Modify > Expert > Compare Options > Date & Time
to Ignore files LastModified less than 7 days ago (or even 168 hours ago, if you want finer-grained control: see the contextual Help on the Date & Time page for the rounding that is used). Run this profile to flush old files (the files you did not tell it to Ignore) from Source. Note that you should absolutely monitor it until you are satisfied it is acting on the correct files. Use at your own risk.
Then just create and use a standard Mirror (Right) profile to copy the slimmed-down file-set from common Source to the Destination.
You can create a Group, put the two profiles in it (probably in the order listed above) and then run the Group as a single entity.
