For the first question, it depend on your version of Windows (also, how you run the profiles) exactly what will happen, and you haven't given that information. But there is a setting on
Modify > Expert > Log > top two options
that may assist. See the contextual Help on that Log page (press F1 with page open) for background on various caveats.

Deleting orphans from Destination/Right is called Mirror (in some cases,displayed as Mirror Right) in V6. You can do this by selecting Mirror as your profile type when creating a profile, or simply go to Decisions-Files and set it to do so (files on Destination but not on Source => Delete). Provided you have no other options set that mean it is not a true Mirror (for example, deleting empty folders from Destination but not from Source means it will not be a true Mirror) the Type of the profile will self-change to Mirror (Right or Left, depending what you set)
