2) by default, files are copied exactly as-is. Compression is optional, and if Compression (Zipping) is used, Encryption is optionally available. You can manually retrieve files, and if Compressed/Encrypted, use a stand-alone Zip utility to extract the contents (there are some exceptions to that - see the Help on the Compression page; not all Zip utilities can handle all formats, but which format you choose is up to you, if you use it at all)
3) we use a mode that can either
a) remember what it copied previously (and not copy same files again, even if not present where it is currently looking as a Destination)
OR
b) detect (via archive-bit) Source files that have changed recently (and only copy those)
and (in either of the above methods) use Variables in the Destination path (e.g. ...\%DAYOFWEEKNAME%\...) to simulate rotating locations (or you could use actual rotating media and use a fixed path to point to it, if you want)
It actually sounds (based especially on Q1) that you haven't actually installed a copy yet, and you'll stand more chance of answers if people can describe things you can see, and not just imagine.
The Free version does not support incremental/differential, by the way

The SE & Pro versions are separate products, but can be (and should be) installed in parallel with each other for cross-evaluation. Do not install the two different versions to the same folder (just accept the default folders for an easy life). The SE & Pro versions will both uninstall cleanly if you decide not to purchase. If you do decide to purchase, the serial number will unlock whichever version you decide to license. There is no need to uninstall the 'trial' and download a 'registered' version. Entering the serial number converts the former to the latter. Any version you decide not to keep will uninstall without affecting the version you do keep (if any).
Remember that you can always upgrade from SE to a Pro license at a discounted price, so if in doubt whether you (yet?) need the advanced Pro features, it is probably best to start with the SE version.
Remember to post in the forum section relevant to the 'model' (SE or Pro) you have, as people make assumptions what can (not) be done based on where you post (if you have both, say so, to give them the chance to add a rider to that effect if required)
