For full backups weekly and incremental backups daily, there are many examples in the Fast Backup section in the Help file of the program. Scroll to the bottom for them. You can based on these instructions to set up your Full Backup/Incremental Backups.

For Versioning, you can enable it via

Modify > Expert > Copy/Delete > Versioning

Please note that although you can use Fast Backup with Versioning, bear in mind that this can greatly reduce the performance gains you get with Fast Backup. This is as stated in the Versioning section of the Help file.

Bear in mind that if you plan to use Versioning with a default Backup or Mirror (Right) profile, you should turn on Versioning on Destination, instead of Versioning on Source.

Versioning on Source (or Left) will only be activated if files on Source/Left are replaced or deleted by the actions of the profile.

It's designed mainly for SmartSync profiles (when stuff might be changed / copied to (or deleted from) both sides). It will normally do nothing in a Backup or Mirror (Right) profile, because normally they only copy one way / only change stuff on Right/Destination.

Turning on Versioning on Source will only force the program to check for Versions that won't ever exist.

In addition, the $SBV$ folder/s are dynamically created only if there is anything to store in them / deleted if the contents expire. Therefore it's normal to not see the $SBV$ folder being created right after enabling that option and running the profile (if there are no changes to the Destination files yet).
