There's no setting to force a profile to overwrite a file on one side with a file on the other if how you have the profile set to compare the two sides delivers identical results (e.g. LastModified = same). The setting you quote ("Source overwrites Destination always") only applies if the files exist on both sides and are different).
The only thing you could do is flush the Destination first (completely) before scanning (which is possible - see Copy/Delete > Advanced: use at your own risk)
But if that would suffice (you do not actually need the files to stay on Destination), not sure why you need to Move them from Source in the first place (that is, why Copy to Dest first? Why not just delete them from Source?). I guess there is a reason (or you wouldn't be transmitting them there in the first place), but not sure what it is. In any case, there's no blind-copying. You'd need to remove such matching files on the Destination first. (or, render them 'non-matching', but not sure how you'd achieve that)
